Any one of the handmade tamales from The Tamale Collection in Sedlar's Southwest Kitchen can be prepared and served with equal ease for a family week-night dinner or the grandest of fiestas. For a summer night, you might choose a Spinach and Goat Cheese Tamale with Tomatoes and Balsamic Vinegar. During the holidays, try our Harvest Pumpkin and Turkey Tamale with Cranberry Salsa. For Valentines Day, consider sharing a Chocolate Cognac Dessert Tamales with your sweetheart. In addition, Sedlar's Modern Southwest Kitchen has created the desert Sweet Corn Tamale, the official tamale of the Indio International Tamale Festival, a sweet corn tamale enriched with cheese and roasted green chile rajas. Each tamale from Sedlar's Modern Southwest Kitchen comes wrapped firecracker style in corn husks, ready for you to heat and serve.

It is easy to order tamales from Sedlar's Kitchen. Choose from the order options (A or B), make your menu selections, print out our form, fill in the blanks and fax your order to our Kitchen. We will fax back a confirmation.

Your order will be shipped frozen, with ice packs. Refreezing is not recommended. The tamales should be kept refrigerated and served within 10 days.

Preparation Instructions:
In the microwave: Place tamales on a microwave-safe plate and add 1 tablespoon of water. Cover with plastic wrap, leaving one edge open. Heat on high until hot, 2 to 4 minutes, depending on oven's power. On the stove: Put 1 inch of water in a pot and insert a vegetable steamer basket. Cover pot and bring water to a boil over high heat. Reduce to a brisk simmer and steam tamales until heated through, about 10 minutes.

Serve hot with your favorite salsa or condiment.
